Parsnip & Beetroot Chips

A new twist on chips! These easy to prepare chips are a tasty way to get more vegetables into your diet. The kids won’t complain about this one!


  • 2 beetroot, peeled
  • 2 parsnips, peeled
  • Sea Salt


  1. Preheat oven to 190c
  2. Finely slice beetroot and parsnips (mandolin is perfect for these), toss in extra virgin olive oil and sprinkle with sea salt and place on tray – try not to overlap them. Turn them once and bake until golden brown – around 15 minutes – keep your eye on them not to burn
  3. ENJOY!
