A new twist on chips! These easy to prepare chips are a tasty way to get more vegetables into your diet. The kids won’t complain about this one!
2 beetroot, peeled
2 parsnips, peeled
Preheat oven to 190c
Finely slice beetroot and parsnips (mandolin is perfect for these), toss in extra virgin olive oil and sprinkle with sea salt and place on tray – try not to overlap them. Turn them once and bake until golden brown – around 15 minutes – keep your eye on them not to burn
