Quinoa Tabouleh
Ingredients
- 1 cup of Quinoa (black, white or mixed)
- 1 bunch flat leaf parsley
- ¼ cup of chopped mint
- 8 cherry tomatoes halved
- 3 spring onions – finely sliced
- 2 tbs of olive oil
- Juice of half a lemon
Instructions
- Cook quinoa as per instructions on pack. Drain and place in salad bowl.
- Add parsley, mint, tomatoes, onions, olive oil and lemon juice. Combine well.
- Serve with Grilled Paprika Chicken and optional tzatzki on the side
