Colourful Tomato & Feta Salad

A side salad that is sure to please. Tomatoes are little treasures packed with antioxidants and they contain excellent amounts of vitamin C and beta-carotene.


  • 500 gm mixed tomatoes (Roma, Cherry, Russian Black and Heirloom)
  • Half bunch Spring Onions
  • 1 tablespoon Olive Oil
  • 2 teaspoons of Apple Cider Vinegar
  • ¼ cup Basil Leaves
  • 100gm Feta


  1. Slice larger tomatoes into quarters and smaller ones into halves, finely slice spring onions and basil leaves – add all three to a salad bowl and crumble feta on top. 
  2. Mix olive oil and vinegar together and dress salad.
