Brussel Sprouts with Bacon & Pine Nuts

Eating Brussel Sprouts regularly have been associated with helping in the prevention of certain cancers. They are beneficial in helping lower high cholesterol levels, packed with antioxidants, anti-inflammatory and rich in fibre. 100gms of Brussel Sprouts (approx. 10) has more Vitamin C than an orange!

Ingredients

  • Zest and juice of 1 lemon
  • 400g Brussel sprouts – halved
  • 25gm butter
  • 5 rashes of gamze bacon – finely chopped
  • ¼ cup of pine nuts – toasted

Instructions

  1. Boil Brussel sprouts in boiling water for 3-5 minutes – drain well.
  2. Melt butter in frying pan over high heat.
  3. Add bacon and cook until lightly browned. Add the Brussel sprouts, lemon zest and juice and pine nuts.
  4. Gently toss to combine – serve immediately.
